- 1
For the gatte: in a bowl, combine 1 cup gram flour, 1/2 tsp turmeric, 1/2 tsp red chili powder, 1/2 tsp coriander powder, 1 tsp ajwain, 1 tbsp oil, and salt. Add water gradually and knead into a stiff dough. Divide into 4 portions and roll each into a 1/2-inch thick log.
- 2
Boil 4 cups water in a wide pot. Slide in the dough logs and boil for 10-12 minutes until they float to the top and feel firm. Remove, let cool slightly, and cut into 1-inch pieces (the gatte).
- 3
For the gravy: whisk 1 cup yogurt, 2 tbsp gram flour, 1/2 tsp turmeric, and 1/2 cup water until smooth. Set aside.
- 4
Heat 2 tbsp oil in a pan. Add 1 tsp cumin and let it splutter. Add 1 tsp red chili powder and 1 tsp coriander powder. Stir for 30 seconds, then pour in the yogurt mixture, stirring continuously to prevent curdling.
- 5
Bring to a gentle boil on low heat, then add the gatte pieces. Simmer for 15 minutes, stirring occasionally, until the gravy thickens and coats the gatte. Add water if too thick.
- 6
Finish with 1/2 tsp garam masala. Serve hot with roti or rice. A classic Rajasthani dish born from pantry staples.
