Instructions

  1. 1

Boil 4 potatoes, peel, and mash while hot. In a pan, heat 1 tsp oil, add 1 tsp mustard seeds and let them pop. Add curry leaves, 2 chopped green chilies, and 1/2 tsp turmeric. Pour this tempering over the mashed potatoes. Add salt and mix well. Shape into 6-8 balls and flatten slightly.

  2. 2

For the batter: mix 1 cup gram flour, 1/2 tsp turmeric, 1/2 tsp salt, and a pinch of baking soda with water to make a thick, smooth batter.

  3. 3

Heat oil in a deep pan. Dip each potato ball in the batter, coating completely, and slide into the hot oil. Fry for 3-4 minutes until golden and crisp, turning once. Drain on paper.

  4. 4

Slice 4 pav buns horizontally, keeping the base attached. Spread garlic chutney on one side and tamarind chutney on the other.

  5. 5

Place a hot vada in the bun, press gently so it flattens, and top with a fried green chili if desired.

  6. 6

Serve immediately. Eat in one or two bites for the authentic Mumbai street-food experience.
