Instructions

  1. 1

Rinse 1 cup toor dal and pressure cook with 3 cups water and 1/2 tsp turmeric for 3-4 whistles until soft. Mash lightly and set aside with its water.

  2. 2

In a pan, heat 2 tbsp oil (not ghee - this is fully plant-based). Add 1 chopped onion and saute for 5 minutes until golden. Add 2 chopped tomatoes and 1 tsp coriander powder. Cook for 6 minutes until the tomatoes break down.

  3. 3

Add the cooked dal and 1 cup water. Simmer for 10 minutes, stirring, until the dal is creamy and well blended. Add salt to taste.

  4. 4

For the tadka (tempering): in a small pan, heat 2 tbsp oil until very hot. Add 1 tsp cumin, 3 sliced garlic cloves, and 2 dried red chilies broken in half. When the cumin splutters and the garlic is golden, immediately pour this sizzling tadka over the dal.

  5. 5

Cover the dal pot immediately so the smoky aroma is trapped. Let it rest for 2 minutes.

  6. 6

Garnish with chopped coriander. Serve with steamed rice. This vegan version keeps all the flavor without any ghee or butter.
