Instructions
- 1
Rinse 1 cup chana dal and pressure cook with 2 cups water for 3 whistles until soft but not mushy. Drain completely - there should be no water left.
- 2
Grind the cooked dal with 1 cup grated jaggery, 1/2 tsp cardamom powder, and a pinch of nutmeg into a coarse paste. Transfer to a pan and cook on low heat for 8-10 minutes, stirring constantly, until the mixture thickens into a soft dough (the puran) that leaves the sides of the pan. Let it cool.
- 3
For the dough: knead 2 cups whole wheat flour with 1 tbsp ghee, a pinch of turmeric, and water into a soft, pliable dough. Cover and rest for 15 minutes.
- 4
Divide the dough and the puran into equal portions (about 8 each). Flatten a dough ball, place a portion of puran in the center, and seal the edges. Dust with flour and roll gently into a thin disc, taking care not to let the filling spill out.
- 5
Cook on a hot tawa with ghee for 1 minute per side until golden spots appear. Flip and cook the other side similarly.
- 6
Serve warm with a dollop of ghee. A festive Maharashtrian sweet made for Ganesh Chaturthi and Diwali.
